Paneer hakka noodles in oyster sauce

Hakka noodles are the way most people in our country were introduced to noodles and by far it never disappoints. Here is a simple and easy to make a recipe for any time with your choice of protein ours being fresh paneer this time.

  • Egg/ wheat noodles: 200 gm
  • Fresh paneer : 80 gm
  • Onion : 20 gms
  • Garlic : 10 gms
  • Carrot : 20 gm
  • Scallion : 10 gms
  • Bellpeppers : 5 gm each
  • Snow peas : 20gms
  • Seasoning : A/R
  • White oil : 20ml

Steps Involved in Cooking:

  • 1 .Parboil noodles in boiling water with salt and set aside for cooling with a dash of oil
  • 2 .Cut paneer into cubes , carrot , scallion and snow peas into juliennes and the bellpeppers into flakes. Slice onions and fine chop garlic.
  • 3 .In a wok or tossing pan heat 20 ml of oil and add onion. Saute’ till translucent and add garlic. Cook till golden
  • 4 .Add the vegetables and stir fry on high flame till they wilt
  • 5 .Add the oyster sauce and a little water to help the vegetables to coat
  • 6 .Add in the paneer and noodles and mix gently
  • 7 .Adjust seasoning and toss a few times on high flame
  • 8 .Serve hot

Pointers

To ensure the paneer does not break too much, the noodles can be added first, tossed and then the paneer cubes can be mixed in by stirring gently
